- What is the difference between the 8 in chat $ 200 which I have in my cart, and the same at $285 ? Both are ikon series.
- Our Classic Ikon line has a synthetic handle made of POM (polyoxymethylene). The Classic Ikon 8" chef's knife is $200. Our Ikon line has a real African Blackwood handle. - Does one of your hand held sharpeners have the correct angle so that the edge will retain its 29 degree angle. I notice that some knives have a 28 degree angle. I don't want to buy the more expensive knife if I don't have a way to maintain the edge. My wife and I know that we are not proficient with steel and whetstone.
