"Hi Wusthof – We love our Wusthof knives (the collection is very large) – I just convinced my wife that a second block on the counter for my ‘special’ knives would be OK. The new Ikons live there. I am a sharpener and use diamond plates to keep all the knives in great shape but when my wife grabbed the new Ikon paring knife the other day for a small task she commented loudly “Hey, these new knives are ‘really’ sharp!!” I guess I need to tune up my skills. In addition to enjoying cooking in our kitchen we love all the competition cooking shows – I always try to see what tools the chefs are using and laughed this week when in the middle of “The Ultimate Baking Championship” Season 1, episode 2 the judges are using an Ikon chef knife, just like my new one, to cut and serve the ‘lemon’ dessert. Not sure if that was just their choice or a strategic ‘product placement’ by your marketing team. Regardless, we love to see them out there in the world. I notice on some of my very old Ed. Wusthof knives the bolster is cut square for the scales while all the newer knives use a swept forging for the handles. I have a few old Hoffritz ‘German’ knives that I believe where made by you back in the day – can you please confirm the date range for that partnership? Thanks again for the support and service."
